We are an institution that focus in sustainable cuisine. And to be able to achieve that, we believe that it is important to create a concept which have a minimum impact to the environment, hence we choose plant based cooking using locally and seasonally sourced ingredients as well as investing in our own bio-diversified farm ensuring minimum carbon footprint in the process of growing our produces.
However the consumption of our products is the most important aspect of our sustainability. Waste and landfill in our opinion is the number 1 enemy of sustainable resources and tackling that isn’t easy at all. There are many methods and skills needed to be applied into Tales’ cuisine in order to achieve absolute zero waste let’s just simply say that “No ingredient goes to waste” is our only rule in cooking!

Our mission is to inspire individuals and partners to shift their habits and consumption patterns, actively protecting the environment through practical, purposeful steps.

Tales by chapter seek to create an excellent and ethical restaurant where tradition and innovation work together to create new sustainable and exciting menus every seasons. Our team of young and driven chefs, bartenders, sommeliers and servers are passionate about inspiring dinners in building an amazing sustainable community and we will not stop until our visions are met.
The hamony between humans and nature
At Tales by Chapter, we believe that true harmony between humans and nature is not only possible, but essential for a sustainable future, where both can thrive together, respecting each other’s role in the ecosystem.
For Source Function of nature, we collaborate with organic farms in Da Lat and have developed our own sustainable cultivation systems. We do not use harmful pesticides or growth enhancers, allowing vegetables and fruits to grow naturally, farmers carefully hand-pick pests, working in harmony with the land. This approach ensures the highest quality ingredients, harvested with respect and care for the environment.
For the Sink Function of nature, we embrace a zero-waste philosophy, focusing on reducing, reusing, and recycling at every step. By optimizing every ingredient and repurposing what remains, we ensure nothing goes to waste. From glasses made of 100% recycled materials to coasters woven from hemp, even vegetable scraps are transformed into stocks, sauces, ferment or composted to nourish our rooftop garden These small but impactful actions help reduce environmental pressure, contribute to restoring and maintaining the natural balance sustainably.
