OUR SUSTAINABLE MANIFESTO
ECO FARM
At Tales, nature is at the heart of everything we do, and we believe that to embody this spirit, every ingredient must be nurtured in harmony with nature, with minimal human intervention. This is why Tales chose a farm located deep in a secluded valley in Da Lat, an area completely isolated from pollution and human influence.
Getting to this farm wasn’t easy at first, but it’s that very isolation that makes it perfect for us: the separation ensures that the water and soil remain unaffected by chemicals or artificial substances. The farm is committed to environmentally friendly practices, avoiding harmful chemicals like pesticides and growth regulators. Instead, they rely on natural methods such as vermicomposting and eco-shell products.
When pests appear, the team handles them manually, ensuring that every step is taken with care and respect for the environment.
FERMENTATION
Fermentation is a key technique that allows the restaurant to make the most of ingredients that are often overlooked or discarded. Through the magic of beneficial bacteria and time, these forgotten parts are given a new cycle of life, offering flavors and quality that rival freshly harvested produce.
At Tales, we experiment with various forms of fermentation: fermented tomato, beetroot , corn koji, mushroom garum,.. Notably, all the ingredients used for fermentation come from cut-offs or discarded peels that we thoughtfully repurpose. These fermented creations are then use directly into the dishes served at our restaurant, adding uniqueness and a touch of sustainability to every bite.
REGREENING FOREST
Tales proudly sponsors 10,000 m² of forest in partnership with People and Nature Reconciliation (PanNature) in the Kon Hà Nừng Biosphere Reserve, Gia Lai. The trees planted will be native, multipurpose species, carefully chosen to not only restore the forest ecosystem but also support local livelihoods.
This initiative marks the beginning of our efforts to give back to nature through meaningful actions. In May 2025, the Tales team will join PanNature to visit the forest and plant trees directly. We believe this hands-on experience not only brings tangible benefits to the environment but also inspires our team to live more harmoniously with nature.
