Co-Founder & CEO
With nearly 20 years in the F&B industry, Mr. Quang Dung is the driving force behind Chapter Dining (Michelin Selected) and Habakuk Bistro (Bib Gourmand). He’s the visionary behind Tales’ zero-waste, plant-based concept, combining his passion for sustainability with expertise in the field. While building the brand, he pursued the Sustainable Food: Production and Processing course at Cambridge – often staying up late to write his thesis after the restaurant closed for the day. But yes! He did it.
A nature enthusiast, he easily connects with everyone and brings laughter to the team. But when it comes to work, he’s serious, inspiring, and fully dedicated to turning the vision into reality.

Head Chef
With over nine years in the F&B industry, Chef Hùng has proven to be a true culinary “chameleon,” continuously adapting and reinventing himself, transitioning from Pastry Chef to Chef de Partie and exploring a wide range of cuisines, from Asian to Western. He began his journey with a passion for pastries, but it didn’t take long for him to realize that the culinary world is a vast with fascinating paths to explore. Every kitchen and culinary opened up new lessons and sparked a fresh wave of inspiration within him.
Now, at Tales, Chef Hùng is stepping into an exciting new chapter, one that brings him closer to nature and fuels his creative soul. Here, he dives deep into working with exceptional ingredients, mastering fermentation, and uncovering the hidden potential of vegetables. From celebrating their pure, natural flavors to transforming them into unexpected culinary delights, he finds endless ways to let these humble ingredients shine. “To me, vegetables are more than just vegetables, they’re a vibrant universe of possibilities waiting to be discovered,” he shares with a knowing smile.
Mr. Quang Huan
Sous Chef
Trained in Australia with a diverse career in the F&B industry, Mr. Quang Huan gained hands-on experience across various roles, from barista and bartender to chef at restaurants ranging from casual dining to high-end venues. After returning to Vietnam, he opened his own eatery before joining Tales by Chapter as Sous Chef.
Although initially unsure about the plant-based concept due to his passion for cooking with animal-based ingredients, Mr. Huan saw Tales as a chance to embrace a new challenge. He now plays a key role in guiding the kitchen to optimize ingredient usage and develop fermentation techniques, contributing to a sustainable dining experience at Tales.
Ms. Quynh Nga
Holistic Nutrition & Health Coach
With over 10 years of experience in nutrition and wellness, along with a certification as a Holistic Health Coach from IIN, Ms. Quynh Nga has always been passionate about connecting food with health and sustainability. Her ongoing commitment to learning and staying updated on global trends in plant-based dining and conscious eating makes her an invaluable part of Tales by Chapter.
In Vietnam, plant-based dining is still a new and evolving concept. Tales takes this challenge even further by embracing a zero-waste philosophy – a bold and experimental approach for the entire team. Ms. Quynh Nga serves as a key advisor, ensuring that Tales’ dining experiences are thoughtfully crafted to align with plant-based principles while staying harmonious with nature and committed to sustainability at every step.
